Spring is Sure to Follow

Spring is just around the corner! I don’t know about you, but I am SO ready for it! Winter in the Northeast this year has been really strange – Christmas Day was 70 Degrees, January brought barely any snow, and then BOOM! Blizzards dropping 30+ inches of snow, random ice storms in the middle of the night, -20 degree windchills.  Talk about crazy!

So for me, I’m so ready for Spring that I’ve started decorating the house for Easter already! Bunnies, flowers, eggs, the whole nine yards! All of this just gets me so ready for yummy Spring foods and refreshing drinks.  One of my favorite pairs? Lavender Sugar Cookies and Fresh Lemonade! Here are the recipes that I like to use!




Lavender Sugar Cookies & Lavender Icing

What you need for approx 40 cookies:

1/2 Cup Coconut Oil

1/2 Cup Butter

1 1/4 Cup Sugar

2 Eggs

1/2 Teaspoon Salt

1 Teaspoon Vanilla Extract

1/2 Teaspoon Almond Extract

2 1/4 Flour

1 Teaspoon Baking Powder

4 Teaspoon Dried Lavender

1 Drop Lavender Essential Oil


  • In a large bowl, mix coconut oil, butter, and sugar until creamy
  • Add eggs, vanilla extract, almond extract, lavender essential oil
  • Combine flour, lavender, baking powder, and salt in separate bowl
  • Add dry mixture to the creamed mixture & mix well until smooth
  • Drop small spoonfuls of mixture onto a greased baking pan, approximately two to three inches apart
  • Bake at 375 degrees for 8 -10 minutes.
  • Let stand for 2 minutes before moving to cutting board or baking rack.
  • Let cool before icing 🙂


What you need for icing:

3/4 Cup Butter

3 1/2 Cup Powdered Sugar

1 Teaspoon Dried Lavender

1 Teaspoon Vanilla Extract

1 Tablespoon Milk

4 Drops Red Food Dye

2 Drops Blue Food Dye

Fresh Lavender to Garnish


  • Beat butter alone until creamy
  • Gradually add powdered sugar and dried lavender until blended
  • Add vanilla extract
  • Add milk; if too creamy, use good judgement in adding more powdered sugar
  • Once spreadable & thick, add food coloring (it will end up a pretty purple shade!)
  • Spread over cookies & garnish




Fresh Lemonade

What you need:

7 Lemons

1 1/3 Cup Granulated Sugar

9 Cups Water

Blueberries or Lime (optional)


  • Roll out lemons to slightly soften
  • Juice all 7 lemons, keeping the rinds (*you don’t need a fancy juicer – I use a cheapo Proctor Silex juicer & it’s fantastic*)
  • In a medium sauce pan, heat sugar + 1 cup water + lemon rinds
  • Allow to boil & keep heated for 10-15 minutes
  • Combine lemon juice & remaining 8 cups of water in a pitcher
  • Strain sugar water in to the pitcher – straining will catch the rinds & any remaining seeds not caught in the juicing process
  • Stir well & add additional fruit for flavor
  • Chill in refrigerator and serve over ice
